The sea urchin lives in our cold ocean shallows, its beauty disguised by a spiny body.
When it's washed ashore and sun-dried, the spines drop off to reveal a beautifully
patterned five-sectioned casing in pastel green and chalky cream. The subtly delicious
colours are fitting counterparts to the urchin's uni roe, one of the most expensive
seafood items in Japan.
